  1. Rinse the fish steaks and remove excess moisture with a paper towel. Sprinkle salt and pepper mixture on both sides, brush with olive oil, and drizzle with the juice of half a lemon. Leave to marinate for 15 minutes.

  2. Grease the grill grate with a little olive oil. You can also brush the fish with a little vegetable oil before cooking. This will create a golden brown crust.

  3. Grill the steaks for 3 minutes on each side and serve. You can serve the fish with grilled vegetables, greens, or rice.

Tender mackerel with spices

For 6 servings we will need:

  • Mackerel (fresh or frozen) - 3 pcs.
  • Vegetable oil - 3 tbsp.
  • Garlic - 2-3 cloves
  • Ground ginger - 1 tsp
  • Lemon - half
  • Spices: salt, pepper mix, Italian herbs mix, dried basil - to taste

Let's start cooking:

  1. Defrost the fish first. Trim the fins, heads, and tails, and remove the insides and films. Rinse well and make small cuts on the skin to make a nice pattern.

  2. Season the fish with spices and sprinkle with lemon juice.

  3. Mix ginger, garlic, basil, and Italian herbs with vegetable oil in a separate bowl.

  4. Brush the fish with marinade on all sides and leave to marinate for 30 minutes.

  5. You can cook mackerel for 8-10 minutes on each side, and if the fish is large, you can leave it on the grill a little longer.

Aromatic and flavourful mackerel will go well with fresh vegetables and pita bread.

Green apple carp

  • For 8 servings we need:
  • Carp - up to 2 kg
  • Onion - 3 heads
  • Lemon - 1 pc.
  • Green apple (choose a sour kind, for example, Semerenko or Granny Smith) - 1 pc.
  • Salt, pepper - to taste
  • Vegetable oil - 1 tbsp.

Let's start cooking:

  1. Clean the carp from scales, and remove the fins, the tail, and the head. Clean out the insides, and rinse well. Sprinkle inside and out with a mixture of salt and pepper. Make deep cuts on the skin.

  2. Cut the lemon into slices and place them in the cuts on the skin.

  3. Peel the apple and cut it into thin strips, repeat the same with the onion. Drizzle the apple with lemon juice to keep it from browning.

  4. Put the onion and the apple inside the fish and fix it with toothpicks (or you can tie it with a thread if it is more convenient).

  5. Grease the grill grate with oil and cook the fish for 20-30 minutes on each side. Attention: the fish must be completely ready because eating raw river fish can be dangerous.

Cut the finished carp into portions or serve it whole, garnished with herbs and fresh vegetables.
